Summerween Ghost Ice Cream Sandwich Recipe
The irresistible combination of sweet, fluffy, strawberry-flavored waffles and cool, creamy vanilla ice cream is a fun twist on a classic flavor combo. Using waffles in the shape of ghosts makes this the absolute perfect spooky Summerween dessert!
Ingredients/tools:
- Waffle maker (we used the Dash ghost waffle maker)
- Your choice of waffle mix (check the package to see which additional ingredients you may need to make the batter)
- Strawberry Extract
- Red Food Coloring (optional)
- Your choice of vanilla ice cream
- Cooking spray
Directions:
Make the waffle batter according to the package directions.
Add strawberry extract and stir in food coloring if desired.
Heat the waffle maker and lightly spray with cooking spray.
Slowly add batter to the waffle maker until it just fills the ghost part of the pan without overflowing.
Close the lid and cook until firm.
Remove the waffle using tongs and place on a plate to cool.
Be sure to spray the cooking surface between cooking each waffle.
After cooling, place half of the batch of waffles on a plate with the waffle grid side up.
Spoon slightly softened ice cream on top of waffles and gently mash it down.
Place the other waffles on top to create a sandwich and gently press down.
Put the ice cream sandwiches in the freezer to chill until set, then serve and enjoy!
